Grass Crest will still give you stamina regen while 2H. It also stacks with the Chloranthy Ring. I'm currently using a Sellsword build as well. I use Chloranthy, Carthus Bloodring and whatever for the other 2 slots. Throughout the game I was mainly using Lloyd's Sword and Lloyd's Shield. I also buff my Twinblades with Carthus Flame Arc.
That would explain a lot about the people I have encountered. I mean with pvp, a lot of builds are L1/R1-L2-R2/R1 (depending on weapon), and that deals 60-80% of your health. Obviously with builds like the mace or BKS your playstyle counters this, but both are decently viable. They are very viable.
