I see that the plaza area now has the Crucible Knight + Misbegotten boss fight so that's one boss to defeat but I've also noticed that there are 2 lions at the front of the castle.Going to the Altus Plateau at all triggers the world-state to update, emptying out Redmane Castle. At some point, much later in the game, the castle was repopulated, and I could collect the items and fight the boss. I don't know what triggered it, but fighting Radahn and completing the festival was not enough.
